Breakfast: Went to the thesis defense of one of the guys in my lab, where I thought there would be breakfast type foods.  He had only provided Chips Ahoy cookies.  Whoops.  I had four or five.

Lunch: Salad (romaine, grilled chicken, grape tomatoes, bell pepper, onion, pine nuts, feta, dijon-balsamic vinaigrette), a Coke (brought back from the thesis defense).

Dinner: Teriyaki salmon, some kind of frozen veggie blend that had carrots, bell peppers, broccoli, etc. in a balsamic vinaigrette sauce, sourdough bread with butter, spinach and feta bread.

Dessert: Another quarter of the cinnamon roll I got over the weekend, one of my chocolate toffee cookies, and milk.

May 10, 2010

Drove home for Mother’s Day.  I never eat well when I go home for holidays.

Breakfast: One of the chocolate toffee cookies I was making to take with me.  (These cookies are amazing, by the way.)

Lunch/snacks/etc: So, so much food.  Pulled pork, baked beans, deviled eggs, corn pudding, green olives, salad, diet root beer, cheese spread and crackers, half a piece of my mom’s chocolate cake, fruit, another of my chocolate toffee cookies.  Of course, all this occurred over a span of, like, four hours, so take that as you will.

Caffeine: The drive back to school is two hours, and I could feel my eyes drooping from the start, so I stopped at a McDonalds and got a large caramel Frappe.  I don’t really like the taste of coffee that much, so drinks like this are the only way I can drink it.

Dinner/snack: Can you really call a piece of spinach and feta bread with butter dinner?  Whatever you call it, it’s all I ate after I got back to my apartment.

Breakfast: Pastry with cinnamon, apple, and berries, and bite of a 9-layer bar at the farmer’s market.  (Still missed the scones–boo.)

Lunch: Roasted asparagus with lemon, some grilled chicken breast, butternut squash topped with parmesan, sourdough bread with butter.

Snacks: Samples while shopping–spinach and feta bread with butter (strange, but awesome good), various spreads on crackers, ice cream.

Dinner: Pork tenderloin from The Healthy Irishman (don’t have the link handy right now, sorry), salad (romaine, mushrooms, bell pepper, onion, grape tomatoes, pine nuts, parmesan, dijon-balsamic vinaigrette), spinach and feta bread with butter.

Dessert: Quarter of a cinnamon roll with milk, licking the bowl of the cookies I made for Mother’s Day.

Exercise: Health Habits workout, Week 18, Day 3.

Breakfast: Luna energy bar.

Lunch: Cheeseburger, fries, and soft drink from Five Guys.  Only ate, like, half of the fries, though–they give you so many it’s ridiculous.

Dinner: Leftovers from Don Pablos–chicken enchilada and chicken fajita taco with sour cream and guacamole, whole wheat tortilla chips and salsa, Mike’s margarita.

Exercise: Walked/ran on the treadmill–got 2 miles in a little over 30 minutes.

Breakfast: An apple at home, and then a bagel with veggie cream cheese from a student group when I got to campus.

Lunch: Sandwich (whole wheat sandwich thins, chicken, ham, pepperjack cheese, onion, lettuce, mustard), grape tomatoes.

Dinner: Salad (romaine, mushrooms, bell pepper, onion, grape tomatoes, pine nuts, feta, parmesan, avocado, dijon-balsamic vinaigrette), grilled chicken marinated in salsa, sourdough bread with butter.

Dessert: 1/4 of an individual sized key lime cheesecake from Walmart, milk.

Exercise: Health Habits workout, Week 18, Day 2.  I didn’t feel like I did enough–my legs didn’t feel like I had “just run a marathon”–so I got on the treadmill and walked/ran for 15 minutes.

Ate waaaaay too much today.

Breakfast: Lara bar.

Lunch: Sandwich (whole wheat sandwich thins, chicken, ham, pepperjack cheese, onion, lettuce, mustard) and an apple.

Dinner: Pasta with cauliflower, walnuts, and feta, a few pieces of broccoli and red pepper hummus.

Dinner Redux: The martial arts friends wanted to celebrate Cinco de Mayo, so I met them at Don Pablos.  Had part of a margarita, chips with salsa and queso, Mexican rice, corn spoonbread, and a steak fajita taco with lettuce, sour cream, and guacamole.

Exercise: No martial arts class because of the aforementioned dinner.  I think we’re going to have a class tomorrow, though.

May 5, 2010

Mostly eating out today, because I was on campus all day and didn’t have time to pack anything but breakfast this morning.

Breakfast: Greek yogurt with honey, Clif energy bar.

Lunch: Mushroom stroganoff with braised beef and Caesar salad from Noodles & Co., and a small cup of cookie dough gelato as I was walking back to the lab.

Dinner: Grilled chicken sandwich with cheese, spinach, onion, and other things I’m sure I’m forgetting, and original flavor Sun Chips.

Exercise: Nope.  Today was all about studying for the final I had this evening.

Lunch: Sandwich (whole wheat sandwich thins, ham, chicken, pepperjack cheese, onion, lettuce, mustard), grape tomatoes.

Dinner: Pasta with cauliflower, walnuts, and feta, and a little bit of broccoli with roasted garlic hummus while I was waiting for it to heat up, because my stomach was growling.

Snack/Dessert: Roasted garlic hummus, whole wheat tortilla chips, and pepperjack cheese; two Dove caramel chocolates and milk.

Exercise: Skipped martial arts class to study for my final.

Breakfast: I don’t really get up early enough on the weekends to eat breakfast.

Lunch: Ethnic Gourmet frozen meal–chicken tikka masala with rice, some broccoli and whole wheat tortilla chips with garlic hummus.

Dinner: Amy’s brand three bean and pasta soup, sourdough bread with butter.

Snack: Mini-bag of kettle corn popcorn, baby carrots with red pepper hummus.  I’m trying to use the carrots (and sometimes broccoli) as a substitute for tortilla chips to satisfy my craving for something crunchy, but it’s just not the same.  :-/

Exercise: Health Habits workout, Week 17, Day 3.  I haven’t been on a treadmill in forever, so after I got done with this workout I jumped on one for a few minutes to see how I’d do.  I was able to jog/run for a minute pretty easily, or at least more easily than I used to.  Guess my endurance is getting better–that’s good.

Dessert: Three Dove caramel chocolates, milk.
